A dose of real life
Hello!
It’s really cooled down here this week, so I’m really feeling fall and making cozy food. This week, though, was pretty busy and I didn’t have a lot of bandwidth for making anything laborious or that took longer than about 20 minutes. I’m tempted here to make the recipes I share a bit more aspirational, but I know there are a lot of busy people here who would probably appreciate ideas for food when you are out of energy and just need to feed people/yourself. The internet never tells the full story and makes it seem like everyone has their life together, but you’re not alone if dinner is the last thing on your mind. So here are a few ideas for those days. I’ve shared them before but when you need something quick and foolproof, you need to turn to something familiar.

Weeknight Meals
A long time favorite. It bears repeating for those nights when you have no ideas and nothing to make. It’s comforting and everyone likes it and it takes 15 minutes total.
Bean burritos
You don’t need a recipe for this. I like to doctor up my rice with sauteed onions, garlic and peppers, then toast the rice in the oil, add a tablespoon of taco seasoning and then use chicken broth for the liquid. Add to tortillas with beans, cheese, sour cream, avocado and salsa.
Egg and biscuit sandwiches
We used the Red Lobster cheddar bay biscuits from the box because we were in a hurry and those things are goooood. But here’s a recipe from scratch. Stack them with scrambled egg, tomato, avocado, bacon if you have it, and surprise addition that was actually great: arugula.
Weekend Meal
Polenta with sausages, peppers and onions
I riffed on of this recipe from Caroline Chambers this week but since her recipe is behind a paywall, here is this Ina Garten recipe we love and make often with polenta. This is my go-to cooking method for polenta.
You could roast cannellini beans or chickpeas with the vegetables in place of the sausage.
Treat of the Week
My daughter saw a picture of these and was sure they would be the best thing if you had a little flaky salt on top. She was right! 5 year olds, I tell ya.
