Weeknight Meals
We love making homemade pizza and this is one of my favorites. It’s so simple and a great contrast to pizzas with tomato sauce to provide a little variety.
I really like all of Smitten Kitchen’s pizza crust recipes, so if you want to have some failproof guidance, she is a good person to turn to.
Taco Salad
A very basic concept (beans, rice, lettuce, tomatoes, maybe a protein like grilled chicken or ground beef, tortilla chips) but with a few upgrades, it’s a real delight.
The frozen roasted corn from Trader Joe’s, this jalapeno ranch dressing, cotija cheese, pepitas and pickled red onions make this so flavorful.
Ground Pork Udon (epicurious, possible paywall)
I’ve shared this before but it’s so good, it bears repeating. We inhaled it this week for dinner and I ended up doubling the recipe and we nearly finished the whole thing!
You can substitute mushrooms for the meat in this.
Weekend Meal
One Pan Greek Meatballs with Orzo
So many delicious flavors in this recipe!
Definitely serve this with a big green salad. Maybe some crusty bread too?
Vegetarian option: the baked rice with white beans, leeks and lemon
Treat Breakfast of the Week
This was our favorite breakfast this week.
You can use fresh or frozen blueberries in this.
