Aug 18 Meal Plan
Hello!
It’s back to school season and I’m sure change is in the air for a lot of you. It’s my first time having kids in elementary school and for all the change, I’m really happy about having a good schedule to our days. Summer was getting the best of me. Dinner has been so important for us this week as a time to connect and to celebrate my girls’ big achievement of surviving the first week of kindergarten!

Corn Salad with Chile and Lime
I look forward to this salad every summer. It’s the perfect blend of creamy, tangy, sweet and salty. The highest elevation of corn. It is perfect.
I’m not overstating it when I tell you that our neighbor has brought us 14 cucumbers that he’s grown in the past week. I’m sure he’s eating a lot and I know we’re not the only beneficiaries so basically, we all need to be making pickles. We ate these with smashed meatball sliders this week. Also would be great on a vegan sloppy joe!
This was the perfect thing for a hot day when you want a cool dinner. I cooked the chicken for it inside and next time, I will grill it to preserve the coolness in our house. Tofu would work well in this dish.
Weekend Meal
The recipe comes from Rachel Roddy, one of my favorite food writers, a British women living in Rome. Her recipes are mostly the basic things that people cook daily in their Italian kitchens. What she writes about (also most of my favorite foods) could be classified as cucina povera or the kitchens of the poor: making great food with simple, yet high quality and available ingredients. This dish is not flashy, but it’s a wonderful way to use late summer tomatoes. I’ve found that it takes a little longer to bake in my oven so I check at 1 1/4 hours and keep it going if the grains of rice aren’t yet soft. This is worth taking your time for.

I make sure to make this every year. Baked peach desserts like this are great if your peaches are a little less than perfect.
