We were out of town for the majority of this week and when we got back it was scrounging in our kitchen and using up a monster pile of basil from the garden so most of this week’s meal plan is pure fantasy, but still balanced and attainable I hope.

Savory galette
Heirloom Tomato: I haven’t made this but I’ve wanted to all summer! It looks divine.
Zucchini and Ricotta: this is so surprisingly good. It would be a great thing to bring to a social gathering where you need to impress people because it’s delicious and a total showstopper.
Grilled corn and Avocado Salad with Feta Dressing
I’m so into the idea of this salad. I’ll be sure to report back if it works. I’m planning to serve it with some chicken (maybe a rotisserie to make it effortless?) but it would also be good with some shrimp if that’s your deal.
We actually made this before we left on our trip to use up some veggies and it was a delight. You can be very creative about what you add/leave out of this salad. We didn’t have salami or pepperoncini but we added cucumbers, peppers and artichoke hearts and it was great. Follow your heart.
Weekend Meal
Harissa is a delicious flavor bomb, especially roasted on chicken. It’s a little unpredictable spice level-wise, so taste yours a little first and adjust the recipe as needed. This meal has a yogurt sauce and that can definitely help to balance out the spice.
I think roasting cauliflower and chickpeas in place of the chicken would be a great way to make it vegetarian and might be even more delicious?
