Fancy grilled cheese and zucchini cake
Hello!
Here are some fall things that are making me happy: going for walks and seeing the leaves change little by little, baking pumpkin muffins and other good treats, reading The Fellowship of the Rings, organizing and decluttering neglected parts of my house now that kids are in school, listening to old playlists I’ve made in previous falls and pulling out my sweaters from storage (even if it’s not quiiiiite sweatah weathah.)

Weeknight Meals
Butternut Squash Mac and Cheese
This recipe calls for crispy mushrooms on top and I didn’t have some, but I wish I did because it sounds amazing with the creamy pasta.
I used a fairly large squash and had about twice as much sauce as was needed. So I would recommend adding the sauce slowly to the pasta so you don’t accidentally create a pasta soup situation. And then save the sauce for next time or for making soup!
With the leftovers from this, I added them to a baking dish with a little extra cheese on top and baked it- even better than the first time.
Tomato Soup and Grilled Cheese
It’s just really good to have a pantry tomato soup in your back pocket for the nights when you need something pretty fast and pretty cozy. This is a good one for that.
The options are limitless for fancying up your grilled cheese (although a simple one on sourdough bread is honestly unbeatable), here are some ideas:
Ham and brie with dijon mustard and fig jam or pears
Pesto, fontina and turkey
Emmentaler (or another swiss) with balsamic caramelized onions
This is a great way to get kids a little more interested in veggies, at least it has worked for mine. They are all pretty obsessed with noodles, especially the chow mein from Panda Express. This is a similar flavor, but when we make it at home we throw in a ton of vegetables and they may eat around some but they are definitely getting a few in there. You can use pre prepared yakisoba noodles to make it more child friendly like we did.
We served grilled chicken and salmon with the noodles and got to use our favorite Japanese Barbecue sauce on those. This sauce is also great for stir fried tofu.
Weekend Meal
Baked Chicken Wings with Pear and Goat Cheese Salad
Sometimes you just want to eat chicken wings for your dinner and I’m here to tell you that’s 100 percent a good idea.
We got a gift of very delicious pears from a friend’s tree this week and we made this salad all week long. Pears, goat cheese (or feta), red onion, candied pecans and spring mix with blush wine vinaigrette.
Treat of the Week
We had a huge zucchini to use up this week and this cake was a delicious way to use it. The chocolate whipped cream was especially good.
