I have some tulips blooming on our table and more blue skies this week. Spring is definitely on its way and I couldn’t be more excited. Can’t wait to get to spend more time outside.

Weeknight meals
Gnocchi with hot and sweet peppers (NYT cooking gift link)
This is an easy and surprisingly delicious dinner. We ran out of normal olive oil while cooking it and used garlic infused olive oil and it was such a good swap. There’s no garlic or onion in this dish so I liked the addition and I will definitely make it again.
There are a lot of ways to riff on this and to bulk it up. We ate this on top of spinach with feta on top, highly recommend. Next time I think I will also roast white beans with the tomatoes and peppers to have a little extra protein in there.
We’re getting a little more sun each day but it’s still so cold! This soup, with the addition of warming spices, will warm you right to your core. Great with a little naan or crusty bread on the side.
This dinner is so fast and everyone loves it. This is a great method and it makes some incredibly flavorful fajitas.
For vegetarians: just make the peppers and onions (add some of the seasoning and finish with lime) and add a few extra beans to the taco. We also love to make some spanish/mexican rice and use it in burritos with the fajitas, beans and toppings inside.

One pan meatballs with garlic bread
I was a little skeptical of meatballs that didn’t require searing before going into the sauce but I needn’t have worried. Absolutely perfect and so satisfying.
If you use half beef and half pork, put the other halves in the freezer and I will have recipes for them in the upcoming weeks!

I’ve shared a vegetarian meatballs recipe a few times, but I think that this might be a better swap for vegetarians. And also it’s just a great recipe even if you eat meat. Serve the garlic bread with this as well.
Arugula salad with apples and Manchego
We had some shelled pistachios with this in place of the almonds and it was a perfect substitution.

I made the Gnocchi dish a couple weeks ago and i absolutely loved learning a new way to cook gnocchi. It’s fun that the gnocchi cooks in the oven rather than boiling on the stove top. I will make it again! Thank you!
