July 29 Meal Plan
Hello!
I’m going to be on a trip next week, so no newsletter. I hope your July is going well, I can’t believe that August is right around the corner and school is starting soon (my girls are starting kindergarten!). Here’s a few good late summer things to make.

Weeknight Meals
BLT Panzanella or Tomato Panzanella
Since getting into making sourdough, I have a lot more bread to use up and making panzanella is the ideal way to use it. This bacon one is so good but I’m also including a basic recipe that you can throw in any summer veggies you need to use. Also here’s a stone fruit one because the fruit is so good right now. You really can’t go wrong with any variation.
I know lemon is a good all season flavor but this pasta is so easy and fast so it’s perfect for summer.
Serve with a salad or the zucchini saute from last week.
I’ve linked to this recipe before but it’s my favorite mexican chicken and it’s really easy to make ahead, take to a friend or to freeze for later.
For vegetarians, roast a head of cauliflower and then toss with the tinga sauce from the chicken. Put in tacos with beans and avocado. The flavor is so delicious and would work with many different veggies or proteins.
I ate the leftover chicken tinga with cilantro lime rice and a big scoop of cowboy caviar this week and I highly recommend that combination.

Here’s a great black bean burger recipe that I haven’t tried yet but I’m very into as I’ve heard it’s the ideal veggie burger. Let me know if you try it!
Treat of the Week
Add to soda water with a squeeze of lime for a very refreshing summer drink.
Something to Listen to
We saw Jeff Tweedy this week and Le Ren opened for him. I really enjoyed her performance and her album is beautiful. It’s quiet music but it draws you in, probably because her voice is incredible.
