June 10 Meal Plan
Hello!
In a few weeks, my husband is leaving for a trip and I’m going to be solo parenting for 2 weeks. I’m preparing the way any sane person would: compiling a list of dinners that will require little effort and almost no dish washing. We will try not to only eat hot dogs on paper plates, but no promises. I’ll be sure to share what worked for us here in case that’s helpful for you this summer.

Weeknight Meals
These are easy and such a surprising combination that really works.
For the veggie option: the ever reliable crisp black bean tacos. I’ve never gotten tired of these.
Curried lentils with coconut milk
I did about 75% red lentils 25% french green lentils and I would recommend using the combination for texture and contrast.
I always make a very simple raita with lentils since a lot of the time that’s the only part my kids will eat or it’s the part that makes them comfortable enough to try something new. (Just 1/2 a cucumber grated, 1 cup of plain yogurt, a diced shallot, cilantro, salt and cumin to taste.)
We also love the frozen naan from Trader Joe’s with this.
Peanut Udon Noodles
Sometimes you need dinner to be ready in literally 10 minutes, right? Well if you have leftover peanut sauce (from last week’s meal plan) in your fridge, you can make this happen.
Heat two packages of precooked udon noodles (you can find them in the produce section of the grocery store by the tofu and dumpling wrappers) by covering them with boiling water and waiting for 5 minutes, then drain and dress with peanut sauce. Top with steamed edamame and broccoli and fresh bell peppers, cilantro and scallions. Finish with crushed peanuts.
Weekend Meal
Sausages with peppers and onions
Scoop this into rolls, serve with roasted potatoes or eat it with polenta or pasta. I like to add a poblano pepper to this for a little variety.
I’m not an expert, but I’ve heard there are a lot of good vegetarian sausage options on the market these days. It would also be delicious to have fried halloumi with the peppers and onions.
Treat of the Week
Fun drinks for fun summer times! I don’t drink alcohol and most NA drinks are too sweet or don’t feel special. But this one does.
