June 3 Meal Plan
Hello!
June is such a dreamy month, isn’t it? We are having the best weather here this week and I just want to eat dinner outside and spend very little time indoors. So the meals this week will be quick things that are easily eaten outdoors or eaten quickly so you can play and go on bike rides after.

Weeknight Meals
I love these in the summer. They are the perfect blend of easy, tasty and satisfying without being heavy. We like to sub peanut sauce for the spicy mayo and I usually use small diced mushrooms for the vegetables since they mix in with the meat really well and my children eat them without questioning it!
For vegetarians: tofu lettuce wraps or 8 oz finely diced mushrooms sauteed with a shallot and ginger and finished with the lime drench sauce from the lettuce wrap recipe. Serve with rice or another grain and top with peanut sauce. I made this one time when our meat had gone bad and we didn’t actually miss the meat at all.
These are not really huevos rancheros since they lack the ranchero sauce which is the key element of the dish. But they are delicious and a great thing to eat at any time of the day.
The extras really add up here since the main is so simple: freshly made pico de gallo, avocado, beans, cotija cheese, hot sauce, etc. Dress them up and enjoy this supremely easy dinner.
Braised white beans and greens or roasted tomatoes with white beans
I’ve been making bread recently and so we are trying to figure out good ways to turn a loaf of bread into a full meal. Both of these preparations of white beans are great with a loaf of crusty sourdough bread and some cheese.
Weekend Meal
This creator has a lot of great pasta salad recipes in her archives, if you are feeling like trying something new. But this one is a classic and it’s very simple and delicious. Skip the chicken if you don’t eat it or don’t want it and add some chickpeas if you want something else to balance it out.
