I’m writing from the mountains where it is so snowy and we even have the Christmas tree still up, it feels like we went back in time a few months. It’s cozy but a little bewildering since I’m feeling so ready for spring. Hope you are having a good weekend, wherever you are.

Weeknight meals
Lentil soup and paratha
I watched a video of someone making paratha this week and I had to have some. It’s so delicious and flaky, perfect for dipping into a soup, curry or dal. Making it is a fun project too!
I’ve already shared two red lentil soups that I’ve loved, (basic and turkish) but here’s one more if you want to try. This soup is a little smoky and creamy, perfect for dipping paratha or crusty bread.
I love peanut noodles in any recipe so this dish is a favorite. The combination of the curry chicken is great with the peanut sauce. I like to add in raw bell peppers and scallions for a little more crunch and flavor.
You can make these ahead of time and freeze them to make dinners or lunches really easy. These are perfect for a week when you need to make something very easy and very cheap. You can add sauteed peppers and onions, guacamole and salsa to make these delicious.
Weekend Meal
This is a fun and fancy dinner! Perfect for a date night in or a small dinner party.

A vegetarian pasta bake with lots of delicious contrast: crispy cheese and creamy sauce.
Both of these would be great with a big green salad or roasted broccoli.
Treat of the Week
These are so easy when you need to have a delicious treat in a short amount of time. You can really throw so many different things in to doctor these up.
Something to listen to
The Oscars are tomorrow and I love hearing the predictions and analysis of this year’s movies and from Pop Culture Happy Hour. (I’m cheering for Everything Everywhere All At Once to win ‘em all!)
