Weeknight Meals
This is an all time favorite salad for me. I have a few tweaks that I make, but the recipe is perfect as written.
I always make this with a lot more veggies: bell pepper, tomato, green or red onion (bonus points if they’re pickled red onions!), some snap peas since they’re almost in season. You can swap spring mix for the sauteed kale as well. To make this feel more satisfying for a main course, I always add feta or fried halloumi. I also like to add a squirt of honey to the dressing to balance out the acidity of the the lemon juice. The flavors in this salad are perfect and we all really enjoy it.
Green Angel Hair with Garlic Butter
Oh boy garlic butter. So crazy delicious.
This makes quite a lot of pasta, but I felt that the leftovers didn’t really hold up. So I would recommend just making the amount that you intend on eating and saving any leftover sauce.
This was a great dinner with the deconstructed falafel salad on the side to give a little protein with the chickpeas and feta. On its own, it wasn’t substantial enough to satisfy me, so I would definitely recommend having a robust side dish with this pasta.
Ok, it’s far from tomato season, I know! And a watery winter tomato is far from appealing. But the small campari tomatoes are pretty good for a sandwich, or you could use Jenny’s trick with grape/cherry tomatoes.
If you want to skip the chicken in this sandwich, artichoke hearts are a great addition for some good flavor and variety.
Project Meal
Mushroom and Farro Soup or Instant Pot Beef Stew
It’s still technically winter even though spring is so so close and if you want a cozy dinner still, here you go! Make sure to have some good bread close by for dipping in the broth.
We made the beef stew this week on an incredibly rainy day and just drinking the broth was so satisfying and it felt like it was doing great things for our bodies and minds.
Treat of the Week
Ok truth be told these are nothing like crumbly and brittle oreos, these are so rich and decadent. Are they actually whoopie pies? They are so delicious and easy. Highly recommend.
The frosting recipe made twice as much as we needed. Cut it in half or save the extra and make more of these a few days later like we did,
Something to Listen to
First of all, my cousin Anna released a new single and it’s as wonderful as all of her music is.
Secondly, it’s almost Ramadan and Alli’s episode about Ramadan was so good. Really respectful, inquisitive and open. I learned so much.
