We’re getting closer to spring and I’m just thrilled even though we’ve woken up to snow more days than not this week. It’s coming and I’m so grateful.

Weeknight Meals
I’m so excited to be sharing a recipe that I wrote this week! I wasn’t able to take a good picture but hopefully I will soon so we can have a picture with the recipe.
This is one of our favorites and it’s a recipe that was inspired by Amanda Fredrickson’s fridge foraging but has really become our own recipe at this point. I lived in Austria for a while and we had wonderful friends from Spain who made an all chicken paella. This dinner is in no way a paella but I had been searching for something that would fill the same place in my life and this is it. I love this meal and we pretty much never have leftovers when we make it.
For vegetarians, this broccoli and wild rice casserole is delicious and a little nostalgic.
Crisp Gnocchi with Brussels Sprouts
I love crisp gnocchi. I included a recipe a few weeks ago for an oven gnocchi and this stove top version is another way to achieve the perfect crispiness. And to get some greens in with Brussels sprouts.
We’ve been eating roasted cauliflower pretty often recently and it just is so delicious. I think having hummus as well as chickpeas in this bowl is going overboard, but you do you. You can eat this as she instructs or use it to fill a pita or eat on lemony rice. I think the key elements are the roasted cauliflower and chickpeas and the green tahini sauce. You can use feta if you are not able to get halloumi.
Project Meal
Mini meatloaves with mashed potatoes
I have such a fond memory of feeding this to my twins when they were pretty tiny and then this week our 9 month old devoured it. It’s a hit with humans large and small.
This would be great with green beans or a quick green salad.
For vegetarians, here is a vegetarian rice and nut loaf recipe to serve with the mashed potatoes and a mushroom gravy.
Treat of the Week
This is definitely a treat, and I love slices of this when it’s one or two days old toasted with butter on top.
Something to listen to
I’ve loved the Novel Pairings podcast and this month they’ve released episodes about beloved children’s books. They have really great discussions and fun modern pairings. I’ve looked forward to all their episodes this month:
Alice in Wonderland, A Wrinkle in Time and The Lion the Witch and the Wardrobe/The Golden Compass.
