This week was our baby’s first birthday and while we were on a road trip so we couldn’t have a big celebration, it was so fun to think about how much we love him and the wonderful place he holds in our family.
It’s always fun to come back from a trip and get back into making food at home. We loved these meals and hope you do too!

Weeknight Meals
Gorgonzola Roasted Potatoes with Arugula and Tomatoes
This is a variation on a dish my mother in law made for us a few years ago and we have never been able to track it down, so we’ve made it our own.
Cut enough potatoes to fill a sheet pan, allowing some room between the pieces. I used 6 large yukon gold potatoes in wedges, or use halved fingerling or small red or yellow potatoes. Use a generous amount of oil and a big pinch of kosher salt, then roast at 425 for 15 minutes, until the potatoes are starting to get crispy on the underside. Flip the potatoes over and roast for 10 minutes more or until crispy all over and then top with gorgonzola (as with most cheese measurements, let your heart decide how much to use) and return to oven until melted.
Heat oil in a large skillet and add 1 diced shallot and saute until softened, then add 1 lb halved cherry tomatoes. cook until the tomatoes release their juices. Salt to taste and finish with a small amount of honey and a teaspoon of balsamic vinegar.
Assemble salad: potatoes on the bottom, arugula in the middle and tomatoes on the top. Definitely serve with fresh bread.
This charred corn salsa is a marvel. It’s so tasty and when corn is out of season, you can make it with frozen corn, especially the roasted corn from Trader Joe’s. If you use normal frozen corn, let half of it cook in a very hot, dry pan and it will char up a bit and give you that flavor. You will have to cook it a little longer to get the moisture out first, but I promise it will work.
We skip the zucchini radish slaw and eat this with black beans, avocado, cheese and green salsa. Also if you have a sourdough starter, this recipe for sourdough tortillas is one of my favorite things of all time.
I could eat sesame or peanut noodles weekly. This is a very easy and lunchbox friendly meal. Swap the chicken for tofu or skip it and add more veggies!
Weekend Meal
I’ve definitely shared a chickpea curry here at least once but this one might be the best we’ve ever made. I love the creaminess and the addition of cauliflower and toasted paneer or halloumi cubes.
Treat of the Week
Just a solid way to use up the bananas that turned brown while we were out of town. Easy recipe and they turned out delicious.
Something to Listen to
It’s summer reading season and so many of my favorite book people are releasing summer reading guides this month. I love reading year round but the summer is something a little bit special. Novel Pairings has a great episode highlighting new releases and older books that pair well with them that would be easier to find. Lots of fun.
