Hello!
Happy Memorial Day weekend! We brought our family to Portland to visit friends this week. My husband and I lived here for a summer a while ago and we’ve been so excited to get back to some of our favorite restaurants and try new ones. Here’s to old friends and good food!
Weeknight Meals
This is a supremely easy dinner and comes together very quickly. I also like to include quick sauteed green beans with the noodles.
If you want to add another protein, you can make some crispy tofu and mix it in with the noodles, or make chicken satay on the side.
Brussels sprout pizza with Gorgonzola
Alright, this came from an idea that Jenny from Dinner a Love Story shared a while ago. We had leftover gorgonzola from last week’s salad and so it was time to try!
Thinly slice 1/2 lb of Brussels sprouts and toss with 2 tsp of olive oil, a big pinch of kosher salt and a minced garlic clove. Spread on a pizza crust and cook at 450 degrees for 5-7 minutes, until the sprouts are starting to be cooked. Add crumbled Gorgonzola on top and return to the oven until the cheese is melted and starting to brown and the crust is cooked through. Slice the pizza and top with a generous amount of hot honey. (Here is a recipe for homemade.) The hot honey is the key to this so if it’s not tasting amazing, put a little more on top.
Green salad with chickpeas and jalapeño dressing
In the summer when it’s too hot and too busy to cook, we love to have a big salad for dinner. This dressing and the chickpeas could be made ahead of time. I will definitely try her suggestion of adding feta and pomegranate seeds to the salad.

Smashed Chicken Meatball Sliders
These were a big win for our family this week. We ended up having way too much slaw, so maybe cut the recipe down for that. Otherwise, completely perfect.
or Roasted Red Pepper Slab Sandwich
The perfect kind of sandwich for feeding a big crew and it has all the good textures (chewy and crispy focaccia, creamy whipped goat cheese) and a good balance of flavors.
Treat of the Week
Honestly what could be better for a picnic with friends or just for hanging out at home?
