Weeknight meals
This is easy weeknight friendly indian food at its best! You can also add half a head of chopped cauliflower to this instead of one of the cans of chickpeas. Add the cauliflower and water and let cook for 10 minutes before adding chickpeas.
We love this with rice, but also with roti or paratha. And it always makes the meal feel complete to have a raita on the side to cool it down and give some fresh contrast.
The leftovers are even better.
Butternut squash mac and cheese
If you have kids who love mac and cheese they will probably love this pasta. Mine definitely do! And I feel great about getting some veggies into them.
You can also do a butternut squash pasta bake for something a little more decadent. It takes a little longer, but produces crispy edges that are the best thing in the world.
Serve this with a salad. Here’s a kale salad that actually tastes good or my go-to salad: fruit, nuts and feta (or goat cheese). You can substitute dried fruit like craisins or dried cherries for the strawberries.
This soup is easy and satisfying, filling without being heavy. A great midwinter meal.
Here’s a stovetop version if you don’t have an instant pot. This is the soup I’ve been making for years and we always love it. I love that she shows ways to deconstruct this so it can fit everyone’s tastes.
You could make this with vegetarian meatballs.

Enchiladas
There are so many variations, here are a few we like:
Vegetarian (I like to add in a lot more veggies-peppers, onions and squash are great.)
You can always use a canned sauce but if you want to make your own, this recipe is great. This time of year you can make a sauce with canned tomatoes: this recipe for chicken enchiladas has a good sauce recipe.
Honey lime chicken enchiladas are very tasty and a huge hit with our family.
