Weeknight meals
This is a huge hit for our whole family. Everyone can pile on the toppings they like and it’s a total crowd pleaser. My one edit that I usually make is topping it with cotija cheese instead of shredded cheese.
You can skip the chicken in this and really not miss much with beans and all the fun toppings it feels very filling with or without chicken.
Do you sometimes want to eat just fries for dinner? Me too! This bulks it up a bit so you still feel full and satisfied, you get some veggies in there and it’s super flavorful.
I am not a sweet potato fry person and so we use frozen crinkle cut fries and they’re so good in this. And make sure to put feta or fried halloumi on top, that takes it to the next level.
Breakfast for dinner
All the meals this week are minimal effort, maximum delicious, easy to adapt for any preferences. Breakfast for dinner is the ultimate easy delicious and adaptable! You can go for savory (frittata, hash browns, breakfast burritos) or sweet (french toast, pancakes, waffles, crepes) or a combination of both. One thing we love is biscuits with bacon, eggs, tomato and avocado.
Here are a few great biscuit recipes: These are a great basic buttermilk biscuit. Here’s layered jalapeno biscuits (a treat! these are a little different and super fun). And these everything bagel ones I haven’t tried yet but I want to ASAP!
Project meal
Tomorrow is Lunar New Year, so I thought it would be fun to share a few recipes that could be fun additions to a Lunar New Year dinner. There are so many different traditional foods for each culture that honors Lunar New Year, but dumplings are a pretty consistent theme. Here’s a vegetarian dumpling recipe and a pork dumpling recipe. If you add scallion pancakes and a vegetable stir fry, it would be an amazing meal!
Treat of the week
Blueberries are not in season, but we made these with tiny wild blueberries (that almost taste like huckleberries!) that we found in the frozen section of Trader Joe’s. Use whichever frozen blueberries you can. Your muffins will turn out a little more purple than if you used fresh bluebs but they are a delight.

My cousin, Anna makes some incredible music. I love her EP and she’s working on new music I can’t wait to listen to!
