Hello!
Hope everyone had a good week and is enjoying spring! We’ve had an aggressively hot day as well as snow this week so I guess that’s just Idaho/climate change doing its thing. Let’s make some good food! Also shout out to Deb from Smitten Kitchen because after making this meal plan I realized that almost all of the recipes are from her blog or cookbooks. She is one of my favorites and her recipes just always work.

Weeknight Meals
Chicken Tinga Tacos or Cauliflower Tinga Tacos
We love these easy chicken tacos and the veggie version is great too! The meat is also really great in a bowl or a burrito. We always add beans to our tacos cause we have a bean-obsessed kid over here and it can make the meat go a little further.
Charred Salt and Vinegar Cabbage with your choice of sausage and good bread
This is from one of my favorite cookbooks: Smitten Kitchen Keepers. The cabbage was so delicious and we polished it off.
We had this with grilled Polish Kielbasa but it would also be great with chicken apple sausage. There are also a lot of great vegetarian sausages.
Goat Cheese Lemon Pasta with Asparagus
This is an old favorite that I remember cooking on my college study abroad in Vienna. I love food memories like that! It’s a great way to use asparagus that’s in season right now and I love asparagus with lemon.
Weekend Meal
We always make these with the canned beans option and it becomes a weeknight doable meal, but using dried beans would be absolutely delicious and a fun weekend project.
You can skip the beans and use oil to make these vegetarian. Just taste for salt and add a little smoked paprika if you want a smoky flavor.
Instead of making the chips we love to make homemade tortillas and use them to scoop up the beans and toppings. Here’s recipes for corn, flour or sourdough.
Treat of the Week
This was our Easter dessert and I love the combination of sweet and chewy meringue, tart lemon curd and barely sweet and a little tangy whipped cream. We also had these with mixed berries, highly recommend. They also look like cracked eggs which is a fun visual effect.
