My new favorite soup
Hello hello!
We all need warm and filling dinners as it gets colder and darker. I want to encourage us all to listen to the soft animal of our bodies and feed them what they want. I wish you all warmth and light in your homes and to have moments of feeling light and frolicsome at this time of year.

Weeknight Meals
I love Boursin cheese with bread and in a spaghetti squash bake and so naturally it would be so good on pasta. The lemon zest is the real hero here, it brightens everything up. All in all, this is a very quick way to make a pasta that tastes like more than the sum of its parts.
This is an excellent fall salad with a great balance of flavors and textures. We ate this on the side of the pasta, I think this would also be great with a simply cooked piece of salmon or chicken.
Tortellini Soup and No Knead Rolls
I loved this soup, so much good flavor from the leeks and the addition of white wine. For vegetarians, you can completely skip the chicken or sub some white beans in.
The rolls are a version of the peasant bread I love and have raved about on here many times. They are very easy and fast to make.
Weekend Meal
I love Thai curry as the weather starts to get colder- it’s just the most cozy food. Make your own curry paste for extra credit and a unique project!
I added bell peppers for some more color and veg. You can substitute tofu for the chicken in this.
Treat of the Week
This dip is a childhood favorite, also very good with pretzels. I was on a trip with friends last weekend and brought it, it was a big hit.
Something to Listen to
Wrong Place, Wrong Time by Gillian McCallister
This was such a good audiobook. I enjoyed it so much and kept finding excuses to listen to it. It’s fast paced and a little mind-bending but always approachable with a satisfying ending.
