Late Summer Dinners
Hello!
I’m happy to report that I made the corn and avocado salad with feta dressing from last week’s newsletter and brought it to a family dinner and it was a big hit! If you haven’t tried it yet, I highly recommend it. I hope everyone has a wonderful Labor Day weekend. I know it’s the unofficial end of summer, but with fall still weeks away, I won’t transition to cozy meals for a month at least. There is still so much good summer fruit and veg to be eaten in so many different ways. Soup season is long and I’m not ready for it yet.

Weeknight Meals
These burgers were weeknight gold. Not quite banh mi but enough to satisfy my craving for them. Everyone in our house (except for one holdout who ate only the bun, open faced, with only ketchup. Excuse me while I shudder.) loved these. I wish I had a video of our one-year-old asking his dad for more bites. There’s a bit of prep to get started but they go quick after that.
If you don’t eat pork, here’s a crispy tofu banh mi.
Deb never misses! This pasta was so good and very easy to make. The sweet corn really is a great complement to the salty and funky pecorino. It makes a lot, but the leftovers reheated well and were eaten up very quickly. We had this with garlicky green beans and it was a great meal.
We love making these with leftover mashed potatoes, but they’re so good that I don’t think you need to only wait for that occasion to arise. And use some good juicy garden tomatoes for that salsa!
Weekend Meal
Jerk Chicken with Coconut Rice and Strawberry Salsa
This jerk chicken is absolutely delicious and the recipe is very well written and easy to follow. Coconut rice is such a hit around our house. This is possible on a weeknight, but feels special enough for a weekend meal.
Vegetarian options for this would be to use the jerk seasoning on some chickpeas and roast them, serving with the rice and salsa. Or make this mango and black bean rice bowl.
Treat of the Week
It’s still peach season and we should be enjoying them as much as possible, especially cooked into a delicious puddle of juicy cobbler with a crackly crust and served with ice cream. Delightful.

Mostly because they notified me that one of my favorite books is going to be made into a series. But it’s also so fun to hear what we have to look forward to this month!
